Does it depend on Ghostscript being able to correctly render the PDF?
Seems like ps2ascii/ps2text is not under active development so I
wonder if it has problems with newer pdf docs.

Might as well add a filter for it in the distribution.  Then people
can install xpdf or ps2text to select which filter to use.
